Recipe - Spinach Coconut Smoothie with Psyllium & Chia Seeds


This smoothie is a great way to introduce yourself to drinking your greens, because let’s face it, we don’t eat as much greens as we should! As well as providing essential electrolytes, the coconut water and bananas add a delicious sweetness to this drink. Try freezing the bananas to get an even creamier result!

Psyllium husk, LSA and chia seeds are all incredibly high in fibre- very important for a healthy digestive system. A lot of us don’t get nearly as much fibre as we should – you should aim for 30 grams of fibre a day. So this smoothie is an easy way to increase your daily fibre intake, plus it tastes super good. However, as this recipe uses highly absorptive ingredients, it is best to drink this smoothie immediately after making it, to prevent it getting too thick.

1 cup Organic Coconut Water (or filtered water)
2 handfuls organic spinach
2 teaspoons Organic Psyllium Husk
1 tablespoon Organic LSA
handful of herbs like coriander and parsley
1 tablespoon Organic Chia Seeds
½ avocado
1 banana (sliced and frozen)
½ cucumber (cubed)
1 tablespoon tahini (or nut butter of your choice)
1 tablespoon fresh ginger root (chopped)
juice of 1 organic lemon

Combine all ingredients in a blender and process until smooth.
Drink immediately. The psyllium husk will continue to thicken the smoothie as smoothie sits.
