Steel Cut Oats take a little longer to cook than rolled oats, but the wait is well worth it for their satisfying texture and flavour. For a traditional porridge, use 1 cup of oats to 3-4 cups of water or milk, bring to the boil, then reduce the heat and simmer gently for 20-30 minutes, stirring occasionally, until the oats are tender and the mixture has thickened. For a quicker option, soak the oats overnight in water or milk and cook them the next morning in just 10-15 minutes for a creamy, chewy consistency.

These oats are also a great addition to baking, where they lend a hearty bite to cookies, breads, and muffins.
