When life gives you lemons, make a heartwarming, cosy soup! This lemon Chicken Orzo Soup is comforting, hearty and wholesome, all while being packed with nutrition in every soothing bite. With the goodness of Chicken Bone Broth Concentrate, this soup becomes not only more delicious but more nutritious, with broth benefits for immunity and gut wellbeing.
Ingredients:
2 tbsp olive oil
1 leek, sliced
2 large carrots, diced
2 pieces of celery, sliced
3 cloves of garlic, diced
1/2 lemon juice and zest
1/2 cup cream - use oat cream if dairy free
700g cooked, shredded chicken
3 tbsp Chicken Bone Broth Concentrate Lemon Paprika
2.5 litres boiling water
1 tsp pepper
1 cup orzo/rosini
2 tbsp grated parmesan cheese (or nutritional yeast for dairy free)
1 tbsp of dill leaves
Method:
1. In a large pot, gently fry together the leeks, carrots, celery, and garlic in olive oil until soften (about 8 minutes).
2. Add shredded chicken, broth concentrate, water, lemon juice and zest, pepper, parmesan cheese and simmer for 10 minutes.
3. Add orzo and cream, cool for another 8-10 minutes. Taste and season, and add more water if the soup is too thick.
4. Serve into bowls and top with dill and more pepper.
